Best 17 Bean Goulash

It isn't Technically a Goulash, but I really do love saying that word.  So, that's what I'm gonna call it.

And no 17 beans wasn't a typo, there are 17 kinds of beans. I won't name them because that is just tedious, but if you can imagine a type of bean, its most likely in there. I didn't pick all these beans out, like most things it came in a handy little baggy from Trader Joes. 

I was never a big fan of beans when I was little,  but nowadays I attempt to at least get them in my belly a couple times a week. In this small little baggie there are 13 servings and in each serving there is 13g of protein, so for a small girl like me, I'm looking at roughly 27g of protein to hit 100% protein a day. So a serving of the beans a lone, and I already have half my allotted amount.
 

Soak your beenies over night in water. I like my beans to taste like baby mush, so the longer the better. Yummm, I <3 my grilled peppers! 

The bottom pan is diced celery, onions, and carrots. And I just caramelized them with some olive oill, until they were mushy and then added them into the vat of goooo. 

(The goo consists of fresh tomatoes, beanies, vegetable broth, some basil, peppers, celery, onions, and carrots) 

Then siimmmma........

Looks like a ton of Goulash, but I ended up getting about 8-ish full bowls out of this one recipe.  And I maybe spent 10-15 bucks on all of the ingredients.   That's like a $1.50 per dinner, I'm broke...so that sounds amazing to me.  I actually just finished all the leftovers today. Kind of made me sad, but this is a definite "do-again". It kinda tastes like a really hearty-healthy chilli.
